  • ASAP Podcast with Stephanie Horvath R.D. Tennessee Vols Football Team Nutritionist

    Stepanie Horvath UT VolsThe sports nutrition side of training for athletics has become a large slice of the pie in collegiate sports. Its importance is now thought of as a key factor in the overall development of athletes. Poor eating habits coupled with poor food choices is a double whammy against optimal growth. College coaches have a four to maybe five year window of opportunity to develop their athletes to their potential. And, of course, in some instances where a superb athlete may make the jump to professional sports, that time frame might even be shorter. Therefore, it's quite critical to begin the developmental process as soon as the athlete lands on campus. It's no longer a "Hey…. be sure to eat your fruits and vegetables" world. There's too much on the line.

    ASAP went to The University of Tennessee in Knoxville, and sat down at the table with Stephanie Horvath, who is the Director of Performance Nutrition at the storied Southeastern Conference football power where there are six National Championship banners in tow. A pretty impressive fact of college football history and Head Football Coach Butch Jones would like to make it a seventh one day. The Tennessee Volunteers' fan base has a huge amount of pride in the 'orange and white' and has high expectations. So to keep the progress rising, the the Vols will need every edge that they can get! That's where Stephanie Horvath enters the picture. Being a former Division 1 athlete herself, she understands the whole deal and how properly fueling the athletic body can give an athlete the edge that they desire. Since the coaches look for any advantage that they can attain, the nutrition aspect could be a difference maker and lead to a winning performance.  The fact that Stephanie was a member of the Indiana Hoosiers Rowing squad, she learned the value of proper fueling for athletics. It served as a catalyst for her career that landed her at Ol' Rocky Top and directing the sports nutrition program at U.T.. The athletes there are extremely glad she's now in Knoxville. Me too! Because, I got to try one of her Strawberry/Vanilla smoothies and it's a winner! Go Vols!

    In this podcast, Stephanie shares her story of how she was able to encounter such a great opportunity with the Tennessee program. Even better, she explains some great tips for becoming a well educated athlete and some of the requirements for fueling those athletic endeavors!

    While in East Lansing, we had the opportunity to hear from many fine coaches and see some Spartan football guys going through some intense training. But the coaches, athletic trainers and personal trainers in attendance picked up on some great sports nutrition information, too. Michigan State’s Sports Nutrition expert Christine Bradd, who was one of the clinic’s feature speakers, joined ASAP~Athletic Strength And Power’s Ed Cicale for an ASAP~Podcast. Plenty of valuable information for all.

    Christine oversees the sports nutrition needs of the MSU athletes including nutrition education, counseling, training tables, body composition analysis, and supplement evaluation as well as co-instructs a nutrition course and research. She’s on the go….high energy… and a definite advantage for all of those Spartan athletes.

    She’s got an excellent coaching and athletic background…and is a Registered Dietitian (RD) with the American Dietetic Association (ADA). She is also Strength and Conditioning Coach Certified (SCCC) through the Collegiate Strength and Conditioning Coaches Association (CSCCa) as well as a Certified Strength and Conditioning Specialist (CSCS) through the National Strength and Conditioning Association(NSCA), a Level One coach through USA Track and Field, and certified as a Club Coach through USA Weightlifting.

    Flash_img_2 For twenty weeks straight, I have been using strictly Laura’s Lean Beef products in all of my red meat category recipes. That’s what’s in my shopping cart. What a difference! The beef, in all the varieties, definitely changes the way you think and feel about beef. My kids and I really like the taste, and it’s reassuring to know that the meats that we eat via Laura’s Lean come from cattle never given antibiotics or growth hormones.

His strength training workouts can be summed up with one word: INTENSE.  Troy is also a fixture at the summer acceleration training running workouts… he’s the guy flying up and down the field, seemingly effortless.     Troy is a former captain of the University of Cincinnati Bearcats and the Houston Texans of the National Football League (NFL).  In this podcast, Troy talks about his training program as he prepares for his 6th year in "the League" and some talk on sports nutrition, too.

  • The “ASAP Shopping Cart” Welcomes Rachel Clark, MS, RD, CSSD

    Ist2_156499_shopping_cart ASAP~Athletic Strength And Power welcomes Rachel Clark from Purdue University.Purtop1a04_3   Rachel Clark is a Board Certified Specialist in Sports Dietetics (C.S.S.D.) and she has been working with Boilermaker athletes through the Department of Intercollegiate Athletics at Purdue. Rachel, a Registered Dietician (R.D.), earned her Bachelor’s Degree in Dietetics and Nutrition, Fitness and Health and she holds a Master of Science in Exercise and Sports Nutrition. Rachel will be a regular contributor to "The ASAP Shopping Cart" segment of the ASAP blogsite and we’ll be sure to get her scheduled for a future podcast, too.

    Peanut Butter should be in the athlete’s shopping cart. It is:

    Flavorful à Add it into smoothies – it’s particularly tasty with those that contain bananas and/or chocolate.  Spread it on whole grain bread (with or without honey or jelly), apples, or celery.  Stir it into hot oatmeal.  Or be adventurous and include it in pasta dishes as in traditional Thai cooking.

    Low-cost à The cost of 2 tablespoons of peanut butter is roughly 15 to 20 cents… Compare that to the cost of a typical sports bar, which is often at least $1.50.

    Filling à Studies show that peanuts have a high satiety value.  That is, a person feels satisfactorily full after eating this food.  This effect is, in part due to the presence of protein and fiber (as in a whole wheat bagel with peanut butter).  Some people worry that peanut butter is fattening, but despite peanuts’ energy density, studies show that those who eat peanuts compensate and do not overeat total daily calories. 

    Health-enhancing à About 70% of the total fat in peanut is heart-healthy (unsaturated).  Peanut butter also contains fiber, vitamin E, niacin, magnesium, folate, and the antioxidant also found in red wine and red grapes, resveratrol.
